My husband and I got married this last year on the 5th of July. So I'm learning how to cook for 2. I come from a family with 9 kids so its quite the change. We are also both in school and so we have a tight food budget. I try really hard to use "what we have." You'll notice that I often improvise in recipes because I don't have what they are asking for and don't have the cash to go get it. I will always site where the recipe is coming from if I get it on the web or in a book. If I don't reference anything it's a Nettie specialty. :)
Oh, and I always listen to music on Pandora while I cook. Today's station is Micheal Buble.
Today's is a Nettie recipe. STIR FRY!!!
I make stir fry with either steak or pork chops. When I use steak I usually have bought it in the discounted rack and the steak that's chopped up for stew. Feel free to use whatever you like. I also use whatever veggies I have available but its true that I won't make stir fry unless I have peppers. So this is what today's stir fry has in it:
Put your steak on the stove and in the frying pan to cook. I stick it in the pan with an oz or two of water, with a lid on it and on medium heat. As I chop things up I stick them into the pan so the flavors blend and the meat gets flavoring.
While I'm working on chopping thing I also have rice cooking. I usually make 1/2 a cup of rice per person. We have white rice though I prefer brown because it's healthier for you but it's what we got. Most rice is 2 cups water to 1 cup of rice. Put both rice and water in the pan and when it starts to boil turn heat to low and leave the lid on. Checking occasionally for how much water is still in the pan. Rice is done when all of the water is gone but it is not burnt to the bottom of the pan.
This is what all the veggies and meat looks like together today. As for sauce I buy Sun Bird's Stir Fry Seasoning. You can find it at most grocery stores on the Asian food Isle. It requires water, soy sauce, and sugar. I always use to packages.
After mixing your sauce add it to your stir fry mix. Allow it to warm and simmer. Now your ready to serve.
How many people this serves really depends on how much meat and veggies you use. With what I used today it would probably serve 6 (if I had made that much rice). So yes I do have left overs. Personally I will put any left over rice and the stir fry together in the same container and warm up for lunch any time during the next week.
